The Assistant Butcher is responsible for assisting in the preparation of all raw meat, poultry, and game products as directed by the Butcher. Duties include boning, trimming, slicing, portioning, and ensuring all meat preparation meets company quality and hygiene standards. The role involves organizing storage areas, supporting inventory checks, and monitoring thawing and defrosting procedures in line with Public Health regulations. The Assistant Butcher maintains a clean, safe work environment, sanitizes work surfaces, and uses equipment correctly. Additional responsibilities include picking up provisions, preparing mise-en-place, participating in daily meetings, and ensuring adherence to food safety protocols and service standards.

Qualifications

  • Minimum 2 years of experience as an Assistant Butcher or in a similar culinary role within a premium hospitality environment; or professional culinary education with 6 months of related experience.
  • Strong basic butchery skills with the ability to follow standard recipes independently.
  • Proficient in handling all butchery tools and equipment safely.
  • Fluent in English with excellent communication skills for interpreting recipes and instructions.
  • Flexible, stress-resistant, and a committed team player with a strong work ethic.
  • Guest-focused with a positive attitude, professional appearance, and high hygiene standards.
  • Previous cruise ship experience is an advantage.
