The CDP Sushi is responsible for the preparation, presentation, and service of high-quality sushi and sashimi, ensuring adherence to company recipes, USPH/VSP standards, and guest satisfaction. This role involves leading a galley team, overseeing mise-en-place, and managing sushi counters for service, including filleting fish and plating to perfection. Duties include inventory control, waste reduction, and maintaining hygiene and food safety standards. The CDP trains and supervises staff, monitors equipment usage, ensures timely setup and closing procedures, and assists with new menu development and recipe testing. Strong leadership, creativity, and organization in a high-volume, fast-paced environment are essential.
Qualifications
- Minimum 3 to 5 years of experience in sushi preparation, including at least 2 contracts in a CDP Sushi or equivalent role.
- Formal culinary training or apprenticeship preferred; European culinary background is an advantage.
- Strong leadership skills with experience managing multi-cultural teams in fast-paced environments.
- Fluent in English with excellent communication and recipe comprehension skills.
- Proficient in food safety, HACCP, and USPH/public health standards.
- Skilled in recipe execution, conversion, and food cost control, including spoilage management.
