The Food & Beverage Manager oversees all onboard F\&B operations, reporting directly to the Hotel Manager. Responsibilities include managing daily restaurant, bar, galley, and provisioning activities, ensuring compliance with HACCP and USPH standards, and monitoring service quality and guest satisfaction. The role involves budget control, stock management, cost monitoring, and efficient use of systems like Fidelio. The manager leads a multicultural team, conducts training, performance reviews, and ensures adherence to health, safety, and sanitation protocols. Strong leadership, attention to detail, and effective communication are essential to ensure operational excellence and alignment with company policies and guest service standards.
Qualifications
- Minimum four years experience at department head level or equivalent in multiple outlet F&B operation.
- Experience in large fine dining and a la carte restaurants.
- Experience overseeing bars or cocktail lounges.
- Fast food or Quick Service experience is a plus.
- Previous experience in supervising a multi national team including Assistant Managers and/or Supervisors.
- Ship experience required.
- Bachelor of Science degree in hospitality industry or equivalent.
- Proven ability to troubleshoot and implement changes and enhancements.
- Proficiency in common computer applications and e-mail.
- Experience in handling multi-million dollar budgets.
