The Head Waiter is responsible for supporting the Restaurant Manager or Maitre'D in ensuring smooth and efficient food and beverage operations that meet company quality, service, and hygiene standards. This includes overseeing service delivery in the main or buffet restaurant, leading and training a multicultural team, and ensuring guest satisfaction by maintaining high service levels. The role involves planning staff schedules, managing guest reservations, communicating special dietary needs, and conducting daily briefings. Responsibilities also include managing mise-en-place, maintaining cleanliness and safety standards, ensuring compliance with public health policies, monitoring team grooming and uniform compliance, driving sales, and assisting in special events, celebrations, and performance evaluations.

Qualifications

  • Minimum of 2 years’ experience as a Head Waiter, Assistant Maitre’d, or similar role within a premium hospitality brand.
  • Shipboard experience in a comparable position is required.
  • Minimum age of 21 years; physically fit and in good health.
  • Fluent in English with excellent verbal communication skills for guest and team interactions.
  • Proven ability to lead multi-cultural teams in a dynamic, high-pressure environment.
  • Flexible, stress-resistant, and hands-on team player with a guest-focused and service-oriented approach.
  • Professional appearance, positive personality, and impeccable hygiene standards.
  • Strong knowledge of Public Health Policies and food safety regulations.
  • Effective team builder with strong work ethic, motivational, and coaching skills.
