About the Airborne Cruise Training Center  

At our Cruise Training Centre we teach our crew the skills and attitudes that will empower and prepare them for their new responsibilities onboard. Particular emphasis is placed on awareness of life onboard, code of conduct, and HESS (Hygiene, Environment, Safety and Security).

Our facilities, equipment and syllabus were designed in collaboration with AIDA Cruises to simulate their actual ship environments, and include:
  • Galley Section - Culinary
  • Galley Utility Section - 3 sinks & 3 bucket systems, dishwasher, etc.
  • Restaurant & Bar Section
  • Housekeeping Mock Stateroom - with Kärcher wet and dry carpet and floor cleaning equipment, etc.
  • Computer Lab - available for online learning programs and testing
  • Three classrooms – each with a 20 – student seating capacity and audio/visual systems

Our trainers have extensive training and work experience in their fields of expertise and have competed train-the-trainer programs - to ensure consistent delivery of the training methodology, content and results.

Chef Augustine Lobo
Culinary
  • Diploma from the Institute of Hotel Management and Catering Technology, Dadar, Mumbai.
  • Began his career at the Taj Mahal Palace Hotel, Colaba, Mumbai.
  • Served in the pre-opening team for the first exclusive Leisure Club in Dubai (in collaboration with Rank Leisure of the UK), where he worked for 10 yrs.
  • 17-years experience in the Cruise Industry - worked his way up to the position of Executive Chef.
  • Worked onboard Carnival, Royal Caribbean, Cunard, Costa, Classic International and Disney Cruise Line.
  • During his Cruise Line career he was involved in the development and execution of new menus.
  • Conducted USPH trainings on board various vessels.

Mollan Conrad
F&B Service
  • 11 years experience in 5 star hotels.
  • 20 years of cruise line experience.
  • Began his career as a waiter at The Taj Mahal Inter Continental Hotel, Mumbai.
  • Joined Costa Crociere 1992 as an Assistant Waiter.
  • Worked his way up the ranks to the post of 2nd Maitre D’ with Costa Crociere until his retirement from cruise lines in 2012.
  • Attended Johnson & Wales training program of the 21st century Manager for Costa.

Olaf Lobo
Housekeeping
  • Diploma from the Institute of Hotel Management and Catering Technology, Pune.
  • Began his career with the Leela Beach Resort, Goa.
  • 7 years experience with five star hotels.
  • 2 years with P&O Cruises, promoted to Supervisor in the Rooms Division and Guest Relations.
  • 7 years with Disney Cruise Line, ultimately in the position of Executive Housekeeper.

Gazella Britto
Cruise Line Orientation
  • Graduate in Nutrition and Dietetics.
  • Diploma in Advanced Network Centered Computing.
  • 6 years teaching experience, including 2 years as a lecturer and instructor at the Institute of Hotel Management and Catering Technology, Goa, where she taught Food Production and Patisserie, Communication, Hygiene and Sanitation.
  • Conducted Customer Service, Situation Handling and Communication Skills training sessions at various 4/5 star hotels in Goa.
  • Certified HACCP trainer for onboard food operators.

Jay H. Shroff
Deck & Engine
  • 32 Years Experience in the Shipping Industry, including serving as a General Manager (Operations) with divisions of Parekh Marine Group and J.M. Baxi & Co.
  • Deck & Engine Trainer for AIDA Cruises.
  • “Ready for Excellence” Trainer for Costa Crociere.
  • Certified HACCP Trainer by the Royal Institute of Naval Architects (RINA).
